Hutsul cuisine is characterized by simplicity of dishes and, at the same time, their originality. The most frequently used products are potatoes, mushrooms, brynza and sheep cheese made by shepherd at the mountain pastures. Hutsuls used to live in unusual dwellings called kolybas (cabins). Those were wooden structures of round shape with a cone-shaped roof. Now you can come across such constructions not only in the mountains. At present kolybas are small restaurants offering their guests genuine national food: home made smocked food, banush, kremzlyky, knedli and other dishes. There is also a wide choice of dishes of the Ukrainian cuisine and among them are borsch (cabbage soup), deruny (potato pancakes) and varenyky (dumplings). There are also a wide choice of dishes of the Hungarian, Slovak and Jewish cuisines.
